Dear Hiring Manager,

I am applying for the Commis Chef position at The Ridge Hotel, which I saw on Hosco. I completed my B.Sc. in Hotel Management at the Institute of Hotel Management, Shimla, this year, and my six-month industrial training was in a banquet and multi-cuisine kitchen.

At The Pinewood Hotel I rotated through the larder, tandoor and continental sections. I prepared mise en place for 150-cover breakfasts, which meant being in the kitchen before 5 a.m. and having every station ready before the first order, and I assisted on banquets for up to 400 guests. The sous chef trusted me to run the salad counter alone by my fourth month.

I hold the FSSAI FoSTaC Basic Food Safety Supervisor certificate and have completed a HACCP awareness course. I keep my station clean as I work and I am happy to take any section the chef needs.

I can join immediately and would welcome a trial shift in your kitchen.

Sincerely,
Mateo Villarreal

Dear Hiring Manager,

I am writing to apply for the Chef de Cuisine role at Sunset Point Resort. I have five years in resort and restaurant kitchens in Goa and currently run a brigade of nine as sous chef for a 120-cover dining room at Bayview Resort and Spa.

I plan and cost a menu of 45 dishes across Goan and continental cuisine. When I took over the costing, food cost was at 36%; with recipe cards, weekly waste logs and a tighter par list for seafood, it is now 31%, and our guests' scores on the resort's own feedback forms have stayed above 4.5 out of 5. We have also cleared two FSSAI audits with no major findings.

Before Bayview I was chef de partie on the hot section at Saltwater Kitchen, serving about 80 covers a night. I trained four commis chefs there and created 12 seasonal dishes that became our top sellers.

Your resort's focus on local produce is the direction I want to take my cooking. My notice period is 30 days, and I would be glad to cook a tasting menu as part of the interview.

Sincerely,
Wren Castellano

Copy either letter, then change every detail to your own: the company, the job title, your numbers. Pair it with a matching chef resume. The layout, header and greeting are the same for every job: see how to write a cover letter.

How to open the letter

Name the job, where you saw it and your strongest fact in the first two lines. Two openings that work:

  • I run a brigade of nine for a 120-cover restaurant and cut food cost from 36% to 31%, and I am applying for your Chef de Cuisine position.
  • I am a hotel management graduate who prepared mise en place for 150-cover breakfasts during industrial training, and I would like to join your kitchen as a Commis Chef.

What to write in the body

One or two paragraphs that prove you can do the job the advert describes. For a chef, the body should also:

  • Give kitchen numbers: food cost, brigade size, banquet size, audits cleared.
  • Mention food safety certificates (FSSAI FoSTaC, HACCP) and your role in audits.

How to close the letter

Close by offering a trial shift or tasting, which most kitchens use to hire, and give your notice period and shift availability. Keep the tone confident and practical.

Writing it with no experience

  • Lead with your hotel management degree or culinary diploma and your industrial training sections.
  • Describe the volume you worked in: breakfasts, banquets, covers.
  • Offer a trial shift; for commis roles it is the real interview.

Mistakes to avoid

  • Listing every cuisine you have tasted instead of the ones you can cook for service.
  • Leaving out food safety certificates.
  • Not giving covers, brigade size or food cost; kitchens think in these numbers.

FAQ

Your questions, answered.

Still unsure? Send us a message — a real person replies.

How do I write a chef cover letter with no experience?

Give your hotel management or culinary training, the sections from your industrial training, the volume you worked, your food safety certificates, and offer a trial shift.

What should a sous chef or head chef cover letter include?

Brigade size, covers, cuisines, food cost results, menu development and audit record, and an offer to cook a tasting.

Is a cook cover letter different from a chef cover letter?

Cook roles are usually in smaller kitchens, canteens or homes. Focus on the dishes you cook daily, volume and hygiene.

Should I mention guest feedback in my letter?

Only real, sourced numbers, such as scores from your restaurant's own feedback forms, and say where they come from.
